CORSARIO IBIZA: A GASTRONOMIC DREAM COME TRUE

The restaurant located within La Torre del Canónigo hotel, in Ibiza’s Dalt Vila, opens the season with a new concept blending gastronomy and theatricality.

A great culinary experience awakens all the senses, not just taste and smell. In fact, food has the power to stir memories, ignite imagination, and create synergies with other art forms. This summer, CORSARIO Ibiza aims to elevate its culinary offering by combining the islands’ local produce, French techniques, and theatrical flair. The result is “A Midsummer Night’s Dream” — the beloved play by English writer William Shakespeare — reimagined in its most edible version.

CORSARIO Ibiza interprets this classic piece of world literature through two menus, divided as if it were an actual play, immersing diners in a dreamlike yet grounded experience. It all begins with a complimentary glass of champagne in the hotel’s speakeasy, where guests are introduced to the story of the restaurant and La Torre del Canónigo. Then, they head down to the wine cellar, where a caviar and porc negre macaron (a breed of native Mallorcan pig) awaits.

Finally, the curtain rises and the PRELUDE begins — a selection of five bites corresponding to the five tastes the human tongue can detect: sweet, salty, sour, bitter, and umami. Next comes the FIRST ACT, starring a Formentera squid and porc negre and carbonara tortelloni.

In the SECOND ACT, diners encounter Formentera lobster with caviar and egg, Rotja (a local Ibizan fish), and organic pasture-raised chicken bred on the island. The sweetest of OVATIONS concludes the evening, with a pre-dessert of carob bread and white chocolate butter with salt, a traditional flaó (local cheesecake), and petit-fours.

All of this unfolds on a truly special stage: CORSARIO Ibiza is housed in the Corsario building — a 10th-century construction — within the boutique hotel La Torre del Canónigo, nestled in Dalt Vila, the historic center of Ibiza declared a UNESCO World Heritage Site in 1999. As if that weren’t enough, this dreamlike culinary journey takes place on a terrace — designed, like the hotel itself, by Lázaro Rosa-Violán — with views over the Ibizan bay that will transport you into a REM-like dream you’ll never want to leave.

This new gastronomic offering is available in two formats: the Grand Corsario Menu and the Corsario Menu, a shorter version. A wine pairing menu is also available. But the experience doesn’t end with dinner — the after-dinner ambiance continues at Nuts by Corsario, a new collaboration between one of Barcelona’s most exclusive cocktail bars and this restaurant.

After this culinary journey — just like in the play — you won’t be able to decide which dish you loved most, as you’ll be enchanted by the creations of Livan Valdés, the head chef at the restaurant. The only difference from Shakespeare’s play is that when it’s all over, the experience at CORSARIO Ibiza won’t have been a dream — but a reality you’ll want to relive again and again.
