The historic side of Ibiza… Montesol Experimental (Ibiza)
As Ibiza reawakens, Montesol Experimental’s doors are fully open for the season. Reopening on the 1st May is the hotel’s rooftop, now in partnership with Kanpai, a refined raw sushi bar bringing a sophisticated twist to alfresco dining. With views over Dalt Vila, the UNESCO-listed old citadel, guests can select from a menu of nigiri, sashimi, tartares, and tiraditos under the Ibizan sky. Montesol Experimental is a reinvention of the island’s first and most iconic hotel, and is set in a prime location in Ibiza’s historic Old Town, just moments from the harbour and a short drive to beautiful beaches including Experimental Beach Ibiza. Frequented by a wealth of celebrities and hippies alike in the 1950s to the 1980s, the esteemed establishment has played host to Pink Floyd, Orson Welles, and Carolina de Monaco. At Café Montesol, Spanish chef Alex Larrea presents a menu of Mediterranean-inspired dishes with a touch of whimsy, crafted using locally sourced produce. Guests can linger over breakfast, brunch, and sundown suppers that capture both the flavours and the spirit of Ibiza.

Experimental Beach offers a fresh take on Ibiza’s iconic sunset beach bar scene. Perched on a cliff above Las Salinas, it’s known as one of the best spots on the island to catch the sunset. The venue features a beach club and restaurant, open for lunch, dinner, sunbathing, and cocktails. New for this season, Experimental is teaming up with PICANTE, showcasing their SS25 Balearic-inspired collection in the boutique. Guests can also enjoy the new collaborative PICANTE cocktail, available exclusively throughout the season, to a backdrop of vibey DJ sets.
